Overview

The Professional Cookery Level 2 NVQ Diploma aims to provide participants with the practical skills, knowledge, and competence required to pursue a career in the culinary arts. This course is ideal for individuals passionate about cooking and aspiring to become professional chefs or work in the food and hospitality industry.

Throughout the course, participants will gain a solid foundation in culinary techniques, food safety and hygiene, and kitchen operations. They will develop proficiency in preparing, cooking, and presenting a variety of dishes, including appetizers, main courses, desserts, and pastries. Students will train in the production and service of food to a high standard in several ultra-modern kitchens and restaurant facilities on campus.

This qualification is also suitable for those working with local authority catering, school meals and residential or care homes.

There are no formal entry requirements for this course, however applicants you should have a passion for cooking.

It is desirable that applicants have relevant work experience in the catering, hospitality or wider food industry.

Modules

Maintain a safe, hygienic and secure working environment
Maintain food safety when storing, preparing and cooking food
Working effectively as part of a hospitality team
Prepare and cook: vegetables, hot sauces, food safety, soups, fish, pastry, meat, hot and cold desserts, poultry, dough and stocks

Various assessment methods are used including written assignments and practical skills tests.

On successful completion of this course, students will have the opportunity to progress to the NVQ Level 3 in Professional Cookery.

Upon successful completion of the course, participants will be awarded the Professional Cookery Level 2 NVQ Diploma. This recognised qualification demonstrates a high level of competence in professional cookery and culinary skills. It is valued by employers in the food and hospitality industry and can open doors to a range of career opportunities, including working in restaurants, hotels, catering companies, or even starting their own culinary ventures.
